- 1 ½ cups grated zucchini
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- ½ cup sour cream
- ½ cup vegetable oil
- 1 tsp vanilla extract
- ½ cup chocolate chips (optional)
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, combine the grated zucchini, sour cream, eggs, vegetable oil, and vanilla extract.
- In another bowl, mix the flour, cocoa powder, baking soda, baking powder, salt, granulated sugar, and brown sugar.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If desired, fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
