- 1 cup fresh spinach, chopped
- 1/2 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a blender, puree the spinach with a little water until smooth.
- In a large bowl, mix together the cocoa powder, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the eggs, vegetable oil, vanilla extract, and spinach puree.
- Combine the wet and dry ingredients until just mixed.
- Pour the batter into a greased baking pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before cutting into squares.
Notes
- For a richer flavor, add chocolate chips to the batter.
- Store leftovers in an airtight container for up to 3 days.
- These brownies can be frozen for up to 2 months.
