Description

Ingredients

  • 4 large eggs
  • 1 cup spinach, cooked and chopped
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 4 slices of ham
  • Green food coloring (optional)

Instructions

  1. In a bowl, whisk the eggs until well beaten.
  2. Stir in the cooked spinach and a few drops of green food coloring if desired.
  3. In a skillet, melt the butter over medium heat.
  4. Pour the egg mixture into the skillet and cook until the edges start to set.
  5. Gently stir the eggs until fully cooked.
  6. In another skillet, heat the ham slices until warmed through.
  7. Serve the green eggs alongside the ham on a plate.
