- 4 slices of ham
- Green food coloring (optional)
Instructions
- In a bowl, whisk the eggs until well beaten.
- Stir in the cooked spinach and a few drops of green food coloring if desired.
- In a skillet, melt the butter over medium heat.
- Pour the egg mixture into the skillet and cook until the edges start to set.
- Gently stir the eggs until fully cooked.
- In another skillet, heat the ham slices until warmed through.
- Serve the green eggs alongside the ham on a plate.
