Description

Dublin Coddle is a traditional Irish stew made with sausages, potatoes, and onions, simmered to perfection for a hearty meal.


Ingredients

  • 4 Irish sausages
  • 4 slices of bacon
  • 4 large potatoes, peeled and sliced
  • 2 onions, sliced
  • 4 cups chicken or vegetable broth

  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the bacon until crispy, then remove and set aside.
  2. In the same pot, brown the sausages on all sides.
  3. Add the sliced onions and cook until softened.
  4. Layer the sliced potatoes over the sausages and onions.
  5. Pour in the broth and add thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the potatoes are tender.
  7. Serve hot, garnished with the crispy bacon.
