Description

A refreshing and delightful salad made with crisp cucumbers and a tangy Asian dressing.


Ingredients

  • 2 large cucumbers
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions

  1. Wash and slice the cucumbers thinly.
  2. In a bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, ginger, and garlic.
  3. Add the sliced cucumbers to the dressing and toss to coat.
  4. Let the salad sit for at least 10 minutes to allow the flavors to meld.
  5. Before serving, sprinkle with sesame seeds and green onions.

  • For extra crunch, you can add shredded carrots.
