- 1 cup strong brewed coffee
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package Biscoff cookies
- Cocoa powder for dusting
Instructions
- Brew a strong cup of coffee and let it cool.
- In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until smooth and creamy.
- Dip each Biscoff cookie briefly in the cooled coffee and layer them in a serving dish.
- Spread a layer of the mascarpone mixture over the cookies.
- Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
- Dust the top with cocoa powder.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- Make sure the cookies are not soaked for too long to maintain their texture.
- This dessert can be made a day in advance for better flavor.
