- 4 boneless, skinless chicken breasts
- 1 cup fresh mozzarella cheese, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 2 tablespoons balsamic glaze
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the mozzarella, cherry tomatoes, basil, and balsamic glaze.
- Cut a pocket in each chicken breast and stuff with the mozzarella mixture.
- Season the outside of the chicken breasts with olive oil, salt, and pepper.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
- Let rest for a few minutes before slicing and serving.
