A simple and delicious recipe for cheesy ground beef enchiladas that the whole family will love, all made in one pan.

- 1 lb ground beef
- 1 can (15 oz) enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup diced onions
- 1 can (15 oz) black beans, drained and rinsed
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add diced onions, garlic powder, cumin, salt, and pepper to the skillet. Cook until onions are soft.
- Stir in black beans and half of the enchilada sauce. Mix well.
- Fill each tortilla with the beef mixture and roll them up. Place them seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
- Feel free to add your favorite toppings like sour cream, guacamole, or cilantro.
- This recipe can be made ahead of time and stored in the refrigerator before baking.
- For a spicier version, add jalapeños or use spicy enchilada sauce.
