Description

A simple and delicious recipe for cheesy ground beef enchiladas that the whole family will love, all made in one pan.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup diced onions
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add diced onions, garlic powder, cumin, salt, and pepper to the skillet. Cook until onions are soft.
  4. Stir in black beans and half of the enchilada sauce. Mix well.
  5. Fill each tortilla with the beef mixture and roll them up. Place them seam-side down in a baking dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.

  • Feel free to add your favorite toppings like sour cream, guacamole, or cilantro.
  • This recipe can be made ahead of time and stored in the refrigerator before baking.
