Ingredients

  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and cook for an additional minute.
  4. Add broccoli florets and stir to combine.
  5. Pour in chicken broth and soy sauce, and bring to a simmer.
  6. If desired, mix cornstarch with a little water and add to the skillet to thicken the sauce.
  7. Season with salt and pepper to taste, and cook for another 3-5 minutes until broccoli is tender.
