- 1 lb chicken breast, diced
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch (optional, for thickening)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and cook for an additional minute.
- Add broccoli florets and stir to combine.
- Pour in chicken broth and soy sauce, and bring to a simmer.
- If desired, mix cornstarch with a little water and add to the skillet to thicken the sauce.
- Season with salt and pepper to taste, and cook for another 3-5 minutes until broccoli is tender.
- Serve hot and enjoy!

- Feel free to add other vegetables like bell peppers or carrots.
- This dish can be served over rice or noodles for a complete meal.
