A delightful and easy recipe for making Colorado peach fried pies, perfect for a sweet treat.

  • 2 cups fresh peaches, peeled and sliced
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 package refrigerated pie crusts
  • Oil for frying

Instructions

  1. In a bowl, combine sliced peaches, sugar, lemon juice, and cinnamon. Mix well and let sit for 10 minutes.
  2. Roll out the pie crusts and cut them into circles.
  3. Place a spoonful of the peach mixture onto one half of each circle.
  4. Fold the other half over and seal the edges with a fork.
  5. Heat oil in a deep pan over medium heat.
  6. Fry the pies until golden brown on both sides, about 3-4 minutes per side.
  7. Remove from oil and drain on paper towels.
  8. Serve warm, optionally dusted with powdered sugar.

Notes
