- 2 cups diced ham
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 carrots, sliced
- 3 cups chicken broth
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and carrots, and sauté until softened.
- Add the diced ham and potatoes, stirring to combine.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the milk and season with salt and pepper.
- Cook for an additional 5 minutes, then serve hot.
Notes
- Feel free to add other vegetables like celery or peas for extra flavor.
- This soup can be made ahead of time and reheated.
- For a thicker soup, mash some of the potatoes before adding the milk.
