- 1 cup mashed sweet potatoes
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1/4 cup honey (for honey butter)
- 1/2 cup softened butter (for honey butter)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together the mashed sweet potatoes, cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, eggs, and melted butter.
- Combine the wet ingredients with the dry ingredients and stir until just combined.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- While the cornbread is baking, prepare the honey butter by mixing softened butter and honey together until smooth.
- Once the cornbread is done, let it cool slightly before serving with honey butter.
Notes
- For a sweeter cornbread, increase the sugar to 1/2 cup.
- Store leftovers in an airtight container for up to 3 days.
- This cornbread pairs well with chili or soups.
