Ingredients

  • 1 lb ground beef
  • 1 cup diced onions
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup green chilies, diced
  • 4 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef and onions over medium heat.
  3. Add the mixed vegetables, cream of mushroom soup, and green chilies to the skillet. Stir to combine and season with salt and pepper.
  4. Spread the beef mixture evenly in a baking dish.
  5. Top with a layer of mashed potatoes, smoothing it out with a spatula.
  6. Sprinkle shredded cheddar cheese on top of the mashed potatoes.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
