- 1 lb ground beef
- 1 cup diced onions
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup green chilies, diced
- 4 cups mashed potatoes
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, brown the ground beef and onions over medium heat.
- Add the mixed vegetables, cream of mushroom soup, and green chilies to the skillet. Stir to combine and season with salt and pepper.
- Spread the beef mixture evenly in a baking dish.
- Top with a layer of mashed potatoes, smoothing it out with a spatula.
- Sprinkle shredded cheddar cheese on top of the mashed potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
