Description
A delicious and easy-to-make stuffed pepper soup that combines all the flavors of traditional stuffed peppers in a comforting bowl of soup.

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup uncooked rice
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the chopped onion and garlic, cooking until the onion is translucent.
- Stir in the chopped bell peppers and cook for another 5 minutes.
- Add the diced tomatoes, beef broth, uncooked rice, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
- Serve hot and enjoy!
Notes
- Feel free to use any color of bell peppers.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a vegetarian version, substitute ground beef with lentils or a meat alternative.
