Instructions

- Add the egg, espresso powder, and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Top each cookie with a chocolate-covered espresso bean.
- Bake for 10-12 minutes, or until the edges are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
