Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 apple, cored and sliced
  • 1/2 cup walnuts, toasted
  • 1/4 cup dried cranberries
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons balsamic vinaigrette

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes, or until tender.
  4. In a large bowl, combine the mixed greens, sliced apple, toasted walnuts, dried cranberries, and feta cheese.
  5. Add the roasted butternut squash to the salad.
