- 4 lbs beef short ribs
- 2 cups apple cider
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 tablespoons tomato paste
- 1 tablespoon fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 300°F (150°C).
- Season the short ribs with salt and pepper.
- In a large Dutch oven, heat olive oil over medium-high heat and brown the short ribs on all sides.
- Remove the ribs and set aside. In the same pot, add onion, garlic, carrots, and celery, and sauté until softened.
- Stir in the tomato paste, thyme, and bay leaf.
- Add the apple cider and bring to a simmer.
- Return the short ribs to the pot, cover, and transfer to the oven.
- Braise for 3 hours or until the ribs are tender and falling off the bone.
- Remove from the oven and let rest before serving.
Notes
- For best results, use high-quality apple cider.
- Serve with mashed potatoes or crusty bread to soak up the sauce.
- This dish can be made a day ahead and reheated for better flavor.
