Ingredients

  • 4 lbs beef short ribs
  • 2 cups apple cider
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat and brown the short ribs on all sides.
  4. Remove the ribs and set aside. In the same pot, add onion, garlic, carrots, and celery, and sauté until softened.
  5. Stir in the tomato paste, thyme, and bay leaf.
  6. Add the apple cider and bring to a simmer.
  7. Return the short ribs to the pot, cover, and transfer to the oven.
  8. Braise for 3 hours or until the ribs are tender and falling off the bone.
  9. Remove from the oven and let rest before serving.
