A wholesome and delicious flourless Irish oat bread perfect for spring mornings.
Ingredients

- 2 cups rolled oats
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup honey
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup raisins (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine rolled oats, baking soda, and salt.
- In another bowl, whisk together buttermilk, eggs, and honey.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- If using, fold in the raisins.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Store leftovers in an airtight container for up to 3 days.
- This bread can be toasted for extra flavor.
- Feel free to add nuts or seeds for added texture.
