Description

Coq au Vin is a classic French dish made with chicken braised slowly in red wine, mushrooms, onions, and bacon, resulting in a rich and flavorful meal.


Ingredients

  • 1 whole chicken, cut into pieces
  • 4 cups red wine
  • 1 cup chicken broth
  • 4 ounces bacon, diced
  • 2 cups mushrooms, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon flour
  • 2 tablespoons olive oil
  • 1 bouquet garni (thyme, bay leaf, parsley)
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil and brown the chicken pieces on all sides. Remove and set aside.
  3. Add onions and garlic to the pot, cooking until softened.
  4. Stir in the mushrooms and cook until browned.
  5. Add the tomato paste and flour, stirring to combine.
  6. Pour in the red wine and chicken broth, then return the chicken and bacon to the pot.
  7. Add the bouquet garni, salt, and pepper.
  8. Bring to a simmer, cover, and cook for about 1.5 hours until the chicken is tender.
  9. Remove the bouquet garni and serve hot.

  • Serve with crusty bread or over mashed potatoes.
  • For best flavor, marinate the chicken in wine overnight before cooking.
  • Feel free to add carrots or pearl onions for additional flavor and texture.
