Coq au Vin is a classic French dish made with chicken braised slowly in red wine, mushrooms, onions, and bacon, resulting in a rich and flavorful meal.

- 1 whole chicken, cut into pieces
- 4 cups red wine
- 1 cup chicken broth
- 4 ounces bacon, diced
- 2 cups mushrooms, sliced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon flour
- 2 tablespoons olive oil
- 1 bouquet garni (thyme, bay leaf, parsley)
- Salt and pepper to taste
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add olive oil and brown the chicken pieces on all sides. Remove and set aside.
- Add onions and garlic to the pot, cooking until softened.
- Stir in the mushrooms and cook until browned.
- Add the tomato paste and flour, stirring to combine.
- Pour in the red wine and chicken broth, then return the chicken and bacon to the pot.
- Add the bouquet garni, salt, and pepper.
- Bring to a simmer, cover, and cook for about 1.5 hours until the chicken is tender.
- Remove the bouquet garni and serve hot.
Notes
- Serve with crusty bread or over mashed potatoes.
- For best flavor, marinate the chicken in wine overnight before cooking.
- Feel free to add carrots or pearl onions for additional flavor and texture.
