- 1 cup French green lentils
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil

- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water.
- In a pot, combine lentils and water, bring to a boil.
- Reduce heat and simmer for 20-25 minutes until tender.
- Drain and let cool.
- In a large bowl, combine lentils, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
