  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh cherries, pitted and halved
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour (for streusel)
  • 1/4 cup rolled oats
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the fresh cherries.
  6. In a separate bowl, mix together the brown sugar, flour, oats, butter, and cinnamon to make the streusel topping.
  7. Fill the muffin cups with the batter and sprinkle the streusel on top.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.
