Ingredients

  • 1 cup popcorn kernels
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/4 cup corn syrup
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 cup peanuts (optional)

Instructions

  1. Pop the popcorn kernels using an air popper or stovetop method and place in a large bowl.
  2. In a saucepan, combine sugar, butter, corn syrup, and salt. Cook over medium heat until it comes to a boil.
  3. Once boiling, let it cook for 4-5 minutes without stirring.
  4. Remove from heat and stir in baking soda and vanilla extract.
  5. Pour the caramel mixture over the popcorn and mix well to coat evenly.
  6. If using, add peanuts and mix again.
  7. Spread the popcorn mixture onto a baking sheet lined with parchment paper.
  8. Let it cool completely before breaking into pieces and serving.
