A delicious and easy one-pan dinner featuring garlic Parmesan chicken and tender potatoes.

  • 4 boneless, skinless chicken breasts (or thighs for more juiciness)
  • 1.5 pounds of baby Yukon Gold or red potatoes, halved
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste
  • ⅓ cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley (optional, for garnish)
  • Cherry tomatoes or green beans (optional, for added veggies)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, minced garlic, Italian seasoning, smoked paprika, salt, and pepper.
  3. Add the chicken breasts and potatoes to the bowl, tossing to coat them evenly with the seasoning mixture.
  4. Transfer the chicken and potatoes to a large baking dish or sheet pan.
  5. Sprinkle the grated Parmesan cheese over the chicken and potatoes.
  6. If using, add cherry tomatoes or green beans around the chicken and potatoes.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
  8. Garnish with chopped fresh parsley before serving.
