A classic German dish made with potatoes, bacon, and a tangy vinegar dressing.
Ingredients

- 2 pounds of potatoes
- 4 slices of bacon
- 1/2 cup of onion, chopped
- 1/4 cup of apple cider vinegar
- 1 tablespoon of sugar
- 1/4 cup of vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil the potatoes in salted water until tender, then drain and let cool.
- While the potatoes are cooling, cook the bacon in a skillet until crispy. Remove and crumble the bacon, reserving the drippings.
- Add the chopped onion to the skillet and sauté until translucent.
- In a bowl, mix the apple cider vinegar, sugar, vegetable broth, and reserved bacon drippings.
- Slice the cooled potatoes and add them to the skillet with the onions and bacon.
- Pour the vinegar mixture over the potatoes and gently toss to combine.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- This salad can be served warm or cold.
- For a vegetarian version, omit the bacon and use olive oil instead of bacon drippings.
- Feel free to add chopped pickles for extra flavor.
