Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a separate bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
  7. Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
  8. Make a small indentation in the center of each cookie and fill it with a dollop of the cheesecake mixture.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
