Description

A deliciously spiced cake that combines the flavors of gingerbread and coffee, reminiscent of your favorite gingerbread latte.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup brewed coffee, cooled
  • 1/2 cup molasses
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the molasses and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the brewed coffee, starting and ending with the flour mixture.
  7. Pour the batter into the prepared baking pan and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • Top with whipped cream and a sprinkle of cinnamon for a festive touch.
  • This cake can be made ahead of time and stored in an airtight container.
