- 4 medium zucchinis
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Place a zucchini strip on a flat surface, add a spoonful of the ricotta mixture, and roll it up.
- Place the roll-up seam side down in the baking dish.
- Repeat with remaining zucchini strips and filling.
- Top the roll-ups with remaining marinara sauce and sprinkle with mozzarella and Parmesan cheese.
- Bake for 25-30 minutes until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
