A delicious and easy dinner recipe featuring Greek chicken meatballs served with lemon orzo.
Ingredients

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 egg
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup orzo pasta
- 2 cups chicken broth
- Juice and zest of 1 lemon
- Olive oil for cooking
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, egg, oregano, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 10-12 minutes.
- In a separate pot, bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente.
- Once orzo is cooked, drain and return to the pot. Stir in lemon juice and zest.
- Serve the meatballs over the lemon orzo and garnish with additional parsley if desired.
Notes
- For a gluten-free option, use gluten-free breadcrumbs and orzo.
- These meatballs can be made ahead of time and frozen for later use.
- Adjust the lemon juice to taste for a more or less tangy flavor.
