Description

A delicious and easy dinner recipe featuring Greek chicken meatballs served with lemon orzo.


Ingredients

Scale
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 egg
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice and zest of 1 lemon
  • Olive oil for cooking

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, egg, oregano, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 10-12 minutes.
  4. In a separate pot, bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente.
  5. Once orzo is cooked, drain and return to the pot. Stir in lemon juice and zest.
  6. Serve the meatballs over the lemon orzo and garnish with additional parsley if desired.

Notes

  • For a gluten-free option, use gluten-free breadcrumbs and orzo.
  • These meatballs can be made ahead of time and frozen for later use.
