- 1 lb chicken breast, boneless and skinless
- 6 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup orzo pasta
- 2 large lemons, juiced
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, combine chicken broth, chicken breast, carrots, celery, onion, and garlic.
- Bring to a boil, then reduce heat and simmer for 20 minutes or until chicken is cooked through.
- Remove chicken from the pot, shred it, and return it to the pot.
- Add orzo pasta and cook for an additional 10 minutes.
- Stir in lemon juice and fresh dill, and season with salt and pepper to taste.
- Serve hot and enjoy!
