Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground turkey over medium heat until browned.
  3. Add the onion and garlic, cooking until softened.
  4. Stir in the diced sweet potatoes, spinach, chicken broth, paprika, salt, and pepper.
  5. Bring to a simmer and cook for about 10 minutes, until sweet potatoes are tender.
  6. Transfer the mixture to a baking dish and top with cheese if desired.
  7. Bake in the preheated oven for 20-25 minutes until heated through and cheese is melted.
