- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1 cup chicken broth
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground turkey over medium heat until browned.
- Add the onion and garlic, cooking until softened.
- Stir in the diced sweet potatoes, spinach, chicken broth, paprika, salt, and pepper.
- Bring to a simmer and cook for about 10 minutes, until sweet potatoes are tender.
- Transfer the mixture to a baking dish and top with cheese if desired.
- Bake in the preheated oven for 20-25 minutes until heated through and cheese is melted.
Notes
- Feel free to add other vegetables like bell peppers or zucchini.
- This dish can be made ahead of time and stored in the refrigerator.
