Description

A hearty and flavorful stew made with tender beef, vegetables, and rich Guinness beer, perfect for a comforting meal.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup Guinness beer
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside. In the same pot, add onions, carrots, and celery; sauté until softened.
  4. Add garlic and cook for an additional minute.
  5. Stir in the tomato paste, then return the beef to the pot.
  6. Pour in the Guinness beer and beef broth, and add thyme and bay leaves.
  7. Bring to a boil, then reduce heat and simmer for 2-3 hours until the beef is tender.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • This stew can be made a day in advance for better flavor.
  • Serve with crusty bread for a complete meal.
