- Hatch green chiles – 4 cups
- Onion – 1 medium, chopped
- Garlic – 3 cloves, minced
- Tomatoes – 2 cups, diced
- Ground beef or turkey – 1 lb
- Chicken broth – 2 cups
- Olive oil – 2 tablespoons
- Salt – to taste
- Pepper – to taste
- Cumin – 1 teaspoon
- Cheddar cheese – 1 cup, shredded (optional)
- Heat olive oil in a large pot over medium heat.
