- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk (or plant-based milk)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
- Using an immersion blender, blend the soup until smooth (or transfer to a blender in batches).
- Stir in the milk and shredded cheddar cheese until melted and well combined.
- Season with salt and pepper to taste. Serve hot.
