Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green cabbage, chopped
  • 1 cup spring peas
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic and zucchini; cook for another 2 minutes.
  4. Add green cabbage, spring peas, diced tomatoes, vegetable broth, and oregano.
