- 1 cup cottage cheese
- 4 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1 cup shredded cheese (cheddar or your choice)
- 1 pie crust (store-bought or homemade)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the cottage cheese, eggs, spinach, bell pepper, onion, and half of the shredded cheese.
- Season the mixture with salt and pepper.
- Pour the mixture into the pie crust.
- Sprinkle the remaining cheese on top.
- Bake for 30-35 minutes or until the quiche is set and the top is golden brown.
- Let it cool for a few minutes before slicing and serving.
Notes
- Feel free to add other vegetables or proteins to customize your quiche.
- This quiche can be made ahead of time and reheated.
