A delicious and comforting bowl of homemade ramen that captures the essence of traditional Japanese flavors.
Ingredients

- 4 cups chicken broth
- 2 cups water
- 2 packs of ramen noodles
- 1 tablespoon soy sauce
- 1 tablespoon miso paste
- 1 teaspoon sesame oil
- 2 green onions, chopped
- 1 cup sliced mushrooms
- 2 soft-boiled eggs
- 1 cup spinach
- Salt and pepper to taste
Instructions
- In a large pot, combine chicken broth and water, and bring to a boil.
- Add soy sauce, miso paste, and sesame oil to the pot, stirring until well mixed.
- Add the sliced mushrooms and cook for about 5 minutes.
- Meanwhile, cook the ramen noodles according to package instructions.
- Once the noodles are cooked, drain and add them to the broth mixture.
- Add the chopped green onions and spinach, and simmer for another 2-3 minutes.
- Serve the ramen in bowls, topped with soft-boiled eggs, and season with salt and pepper to taste.
Notes
- Feel free to add your favorite toppings such as nori, corn, or bamboo shoots.
- For a spicier version, add chili oil or sliced jalapeños.
- Store leftover broth in the refrigerator for up to 3 days.
