Description

Deliciously sweet and buttery cornbread poppers that are perfect for any occasion.


Ingredients

Scale
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup honey
  • 1/4 cup melted butter
  • 2 large eggs
  • 1/2 cup corn kernels (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, honey, melted butter, and eggs.
  4. Combine the wet ingredients with the dry ingredients until just mixed. Fold in corn kernels if using.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 12-15 minutes or until golden brown and a toothpick comes out clean.
  7. Let cool slightly before serving. Drizzle with additional honey butter if desired.

Notes

  • For a richer flavor, use buttermilk instead of regular milk.
  • These poppers can be served warm or at room temperature.
