Deliciously sweet and buttery cornbread poppers that are perfect for any occasion.
Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup honey
- 1/4 cup melted butter
- 2 large eggs
- 1/2 cup corn kernels (optional)
Instructions
- Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
- In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, honey, melted butter, and eggs.
- Combine the wet ingredients with the dry ingredients until just mixed. Fold in corn kernels if using.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 12-15 minutes or until golden brown and a toothpick comes out clean.
- Let cool slightly before serving. Drizzle with additional honey butter if desired.
Notes
- For a richer flavor, use buttermilk instead of regular milk.
- These poppers can be served warm or at room temperature.
- Store leftovers in an airtight container for up to 3 days.
