- 1 lb heirloom carrots
- 2 tbsp honey
- 2 tbsp olive oil
- 1/4 cup fresh mint, chopped
- 1/4 cup pistachios, toasted and chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the heirloom carrots, then cut them into uniform pieces.
- In a bowl, mix honey, olive oil, salt, and pepper.
- Toss the carrots in the honey mixture until well coated.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender and caramelized.
- Remove from the oven and let cool slightly.
- Sprinkle with fresh mint and toasted pistachios before serving.

- For a vegan option, substitute honey with maple syrup.
