Description

A delightful side dish featuring heirloom carrots glazed with honey, topped with fresh mint and toasted pistachios for a burst of flavor.


Ingredients

  • 1 lb heirloom carrots
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1/4 cup fresh mint, chopped
  • 1/4 cup pistachios, toasted and chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the heirloom carrots, then cut them into uniform pieces.
  3. In a bowl, mix honey, olive oil, salt, and pepper.
  4. Toss the carrots in the honey mixture until well coated.
  5. Spread the carrots on a baking sheet in a single layer.
  6. Roast in the oven for 25-30 minutes, or until tender and caramelized.
  7. Remove from the oven and let cool slightly.
  8. Sprinkle with fresh mint and toasted pistachios before serving.
