- 1 lb chicken breast, diced
- 1/4 cup honey
- 1/4 cup Dijon mustard

- 1 tablespoon soy sauce
- 1 cup broccoli florets
- 1/2 cup carrots, sliced
- Salt and pepper to taste
Instructions
- In a bowl, mix honey, Dijon mustard, olive oil, soy sauce, salt, and pepper to create the marinade.
- Add the diced chicken to the marinade and let it sit for at least 30 minutes.
- In a skillet over medium heat, cook the marinated chicken until golden brown and cooked through.
- In the same skillet, add broccoli and carrots, cooking until tender.
- Serve the cooked chicken and vegetables over a bed of rice.
- Drizzle any remaining honey mustard sauce over the top before serving.
