Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 cup broccoli florets
  • 1/2 cup carrots, sliced
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix honey, Dijon mustard, olive oil, soy sauce, salt, and pepper to create the marinade.
  2. Add the diced chicken to the marinade and let it sit for at least 30 minutes.
  3. In a skillet over medium heat, cook the marinated chicken until golden brown and cooked through.
  4. In the same skillet, add broccoli and carrots, cooking until tender.
