Ingredients

  • Fresh ginger root – 1 pound
  • Granulated sugar – 2 cups
  • Water – 1 cup

Instructions

  1. Peel the ginger and slice it into thin pieces.
  2. In a saucepan, combine the ginger slices, water, and 1 cup of sugar.
  3. Bring to a boil, then reduce heat and simmer for about 30 minutes until the ginger is tender.
  4. Remove the ginger from the saucepan and let it cool slightly.
  5. In the same saucepan, add the remaining sugar and bring to a boil again.
  6. Add the ginger back into the saucepan and cook for another 10-15 minutes until the ginger is translucent.
  7. Remove the ginger and place it on a wire rack to cool and dry.
  8. Once cooled, toss the ginger in sugar to coat it.
  9. Store in an airtight container.
