Description

Delicious individual mini potato kugels, perfect for your Passover Seder table.


Ingredients

Scale
  • 4 large potatoes, peeled and grated
  • 1 large onion, grated
  • 3 large eggs
  • 1/4 cup matzo meal
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the grated potatoes and onion.
  3. Add the eggs, matzo meal, vegetable oil, salt, and pepper. Mix well.
  4. Grease a muffin tin with oil.
  5. Spoon the potato mixture into each muffin cup, filling them about 3/4 full.
  6. Bake for 30-35 minutes or until golden brown and crispy.
  7. Remove from the oven and let cool slightly before serving.

Notes

  • For extra flavor, you can add garlic or herbs to the mixture.
  • These can be made ahead of time and reheated before serving.
