Delicious individual mini potato kugels, perfect for your Passover Seder table.
Ingredients

- 4 large potatoes, peeled and grated
- 1 large onion, grated
- 3 large eggs
- 1/4 cup matzo meal
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the grated potatoes and onion.
- Add the eggs, matzo meal, vegetable oil, salt, and pepper. Mix well.
- Grease a muffin tin with oil.
- Spoon the potato mixture into each muffin cup, filling them about 3/4 full.
- Bake for 30-35 minutes or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
Notes
- For extra flavor, you can add garlic or herbs to the mixture.
- These can be made ahead of time and reheated before serving.
