Ingredients

  • 2 lobster tails
  • 4 tablespoons unsalted butter
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh chives
  • Salt and pepper to taste
  • 2 split-top hot dog buns
  • 1 cup arugula

Instructions

  1. Boil the lobster tails in salted water for about 8-10 minutes until cooked through.
  2. Remove the lobster meat from the shells and chop it into bite-sized pieces.
  3. In a skillet, melt the butter over medium heat until it turns brown and has a nutty aroma.
  4. Add the lobster meat to the skillet and toss to coat in the brown butter.
  5. Stir in the lemon juice, chives, salt, and pepper.
  6. Toast the split-top buns in the skillet until golden brown.
