Ingredients

  • 2 lobsters (about 1.5 lbs each)
  • 1 cup heavy cream
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup dry white wine
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the lobsters in salted water for about 8-10 minutes, then remove and let cool.
  3. Once cool, remove the meat from the lobster tails and claws, chop it into bite-sized pieces.
  4. In a saucepan, melt the butter over medium heat, then whisk in the flour to create a roux.
  5. Gradually add the white wine and heavy cream, stirring until the sauce thickens.
  6. Stir in the Dijon mustard, chopped lobster meat, and half of the Gruyère cheese. Season with salt and pepper.
  7. Fill the lobster shells with the mixture and top with the remaining Gruyère cheese.
  8. Bake in the preheated oven for about 15-20 minutes, or until the cheese is golden and bubbly.
  9. Garnish with chopped parsley before serving.
