Description

A delightful traditional Irish dessert featuring a moist apple cake served with a creamy custard sauce, perfect for teatime.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups peeled and sliced apples
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Add the softened butter, eggs, and vanilla extract to the dry ingredients and mix until well combined.
  4. Fold in the sliced apples and raisins (if using) until evenly distributed.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the custard sauce by whisking together 2 cups of milk, 3 egg yolks, 1/2 cup sugar, and 1 tablespoon of cornstarch in a saucepan over medium heat until thickened.
  8. Once the cake is done, let it cool for a few minutes before serving with the warm custard sauce.
