Description

A hearty and comforting Irish soup made with bacon, cabbage, and potatoes, perfect for chilly days.


Ingredients

Scale
  • 4 slices of Irish bacon
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of chopped cabbage
  • 3 medium potatoes, diced
  • 4 cups of chicken broth
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the bacon and cook until crispy. Remove and set aside.
  3. In the same pot, add the onion and garlic, sautéing until translucent.
  4. Add the chopped cabbage and diced potatoes, stirring to combine.
  5. Pour in the chicken broth and add thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the vegetables are tender.
  7. Chop the cooked bacon and stir it back into the soup before serving.

Notes

  • For a vegetarian version, substitute bacon with smoked paprika for flavor.
  • Serve with crusty bread for a complete meal.
