Ingredients

- 4 slices of Irish bacon
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chopped cabbage
- 3 medium potatoes, diced
- 4 cups of chicken broth
- 1 teaspoon of thyme
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the bacon and cook until crispy. Remove and set aside.
- In the same pot, add the onion and garlic, sautéing until translucent.
- Add the chopped cabbage and diced potatoes, stirring to combine.
- Pour in the chicken broth and add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until the vegetables are tender.
- Chop the cooked bacon and stir it back into the soup before serving.
Notes
- For a vegetarian version, substitute bacon with smoked paprika for flavor.
- Serve with crusty bread for a complete meal.
