- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup brewed coffee, cooled
- 1 teaspoon vanilla extract
- ¼ cup Irish cream liqueur
- Whipped cream for topping
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a greased 9×13 inch baking pan.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the cooled coffee, vanilla extract, and Irish cream liqueur until fully combined.
- Pour the cheesecake mixture over the crust in the baking pan.
- Bake for 30-35 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
- Top with whipped cream before serving.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- Make sure the cream cheese is at room temperature for a smoother batter.
- These bars can be made a day in advance for better flavor.
