- 4 large russet potatoes
- 8 slices of bacon
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped scallions
- Salt and pepper to taste
- Oil for frying
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and slice the potatoes into thin rounds.
- Fry the bacon in a skillet until crispy, then remove and crumble.
- In the same skillet, fry the potato slices until golden brown and crispy.
- Place the fried potato slices on a baking sheet.
- Sprinkle the crumbled bacon and shredded cheese over the potato slices.
- Bake in the oven for about 10 minutes, or until the cheese is melted.
- Remove from the oven and top with sour cream and chopped scallions.
- Serve immediately and enjoy!
