Description

Irish Nachos are a delicious twist on traditional nachos, featuring crispy potato slices topped with savory bacon, melted cheese, and fresh scallions.

Ingredients

Scale
  • 4 large russet potatoes
  • 8 slices of bacon
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped scallions
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice the potatoes into thin rounds.
  3. Fry the bacon in a skillet until crispy, then remove and crumble.
  4. In the same skillet, fry the potato slices until golden brown and crispy.
  5. Place the fried potato slices on a baking sheet.
  6. Sprinkle the crumbled bacon and shredded cheese over the potato slices.
  7. Bake in the oven for about 10 minutes, or until the cheese is melted.
  8. Remove from the oven and top with sour cream and chopped scallions.
  9. Serve immediately and enjoy!

Notes

  • For a healthier version, consider baking the potato slices instead of frying.
