A warm and hearty Irish Vegetable Soup perfect for a cozy meal.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 potato, peeled and diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery; sauté until softened.
  3. Stir in the garlic and cook for another minute.
  4. Add the potato, zucchini, and green beans; mix well.
  5. Pour in the vegetable broth and add thyme and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  7. Remove the bay leaf, season with salt and pepper, and serve hot.

Notes

  • Feel free to add any other vegetables you have on hand.
  • This soup can be stored in the refrigerator for up to 3 days.
