- 1 cup of caramel sauce

Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the eclair pastry according to package instructions and let it cool.
- In a mixing bowl, whip the heavy cream until soft peaks form.
- Add powdered sugar, vanilla extract, and cinnamon to the whipped cream and mix until well combined.
- Slice the cooled eclair pastry in half lengthwise.
- Layer the bottom half of the eclair with whipped cream, diced apples, and a drizzle of caramel sauce.
- Place the top half of the eclair back on and repeat the layering process.
- Chill the assembled eclair cake in the refrigerator for at least 2 hours before serving.
- Drizzle additional caramel sauce on top before serving.
