- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 8 cups chicken broth
- 2 cups fresh spinach
- 1 cup small pasta (like acini di pepe)
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/4 cup chopped parsley
Instructions
- In a bowl, mix ground beef, ground pork, Parmesan cheese, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Form into small meatballs.
- In a large pot, bring chicken broth to a boil.
- Add meatballs to the boiling broth and cook for about 10 minutes.
- Add diced carrots and celery, and simmer for another 10 minutes.
- Add pasta and cook until al dente, about 8 minutes.
- Stir in fresh spinach and parsley, and cook until spinach is wilted.
- Serve hot, garnished with additional Parmesan cheese if desired.
Notes
- For a healthier version, use lean ground turkey instead of beef and pork.
- Feel free to add other vegetables like zucchini or green beans.
- This soup can be made ahead of time and freezes well.
