Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup small pasta (like acini di pepe)
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/4 cup chopped parsley

Instructions

  1. In a bowl, mix ground beef, ground pork, Parmesan cheese, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Form into small meatballs.
  2. In a large pot, bring chicken broth to a boil.
  3. Add meatballs to the boiling broth and cook for about 10 minutes.
  4. Add diced carrots and celery, and simmer for another 10 minutes.
  5. Add pasta and cook until al dente, about 8 minutes.
  6. Stir in fresh spinach and parsley, and cook until spinach is wilted.
  7. Serve hot, garnished with additional Parmesan cheese if desired.

Notes

  • For a healthier version, use lean ground turkey instead of beef and pork.
  • Feel free to add other vegetables like zucchini or green beans.
